The local-style shortlist
Try Gurian pie when you see it fresh, not because a checklist says so. Pair lobio with mchadi and pickles. In Samegrelo, let elarji or ghomi carry one meal rather than ordering every cheese dish together.
At the coast, fresh vegetables, herbs and seasonal fruit balance heavier dishes. Churchkhela travels well, but look for a clear ingredient list if allergies matter.
- Khinkali: eat by hand, hold the top knot, bite carefully and sip the broth.
- Ajarian khachapuri: mix egg and butter into the cheese, tear bread from the edge and share if the table is already full.
- Gurian tea: ask about the leaf, harvest and brewing rather than expecting a formal ceremony.
- Wine: never drink and drive; a toast is an invitation, not an obligation to overconsume.
Allergies, religious diets and clear questions
Walnut paste can appear in vegetables, sauces and fillings. Dairy may be present in breads and cornmeal dishes; pork is common in some sausages and dumpling fillings. Cross-contact is possible in small kitchens.
Say what you cannot eat, ask the kitchen to repeat the ingredient back, and choose simple dishes when the answer is uncertain. Certification matters: a friendly assurance is not the same as kosher, halal or allergen-free preparation.
